Coconut Chia Jelly


  • 1 Tbs agar agar powder
  • 2 cups water
  • 2 cups coconut milk
  • 1 cup rice malt syrup
  • ½ cup chia seeds, soaked in
  • ½ cup water
  • Pinch salt

  1. Add all ingredients except chia seeds into a small pot and bring to the boil. Keep boiling for 15 minutes and remove from heat. Stir through chia seeds and then pour into a large silicone mould or smaller shaped moulds.
  2. Leave to set at room temperature for about 30 minutes. Refrigerate and cut to serve as needed.
